… that may first substack be about banana bread. The quintessential loaf most grew up on and loved. The staple in every kitchen at some point. Mom would make her loaf, or loaves. She'd split the batter into 3 tiny loaf pans. One she'd put chocolate chips in, the other she'd sprinkle brown sugar and cinnamon on top, and the other- plain. Being a chocolate lover, it's easy to know which loaf I snacked on.
What to expect?
I promise to share my banana bread recipe shortly. But first, it's important to know WHY you should subscribe. That's easy. Because I'll be sharing delicious and easy recipes that you can make at home, (or a few tips!). I'll even throw in a story line. Which you may not want to read, but there is no ‘Jump to Recipe’ button. (Oops).
What makes a great banana bread?
It's really about what YOU love. What flavors do you like? How about textures? Some great additions I like to add to my banana bread recipe:
Chocolate chips (duh)
Coconut flakes and pineapple (hello tropical and moist loaf)
Cinnamon and brown sugar
Blueberries! 🫐
Chopped banana- some extra banana in every bite.
A sliced banana on top to make it look like it came from a bakery. Which it did. Yours. Simply slice your banana in half length wise and lay it on top of your loaf.
THE RECIPE.
Full disclosure. This is a whole wheat banana bread 🍞 recipe. But trust me, it delivers a delicious nutty flavor. It is GOOD.
Ingredients:
1 egg
1/2 cup Miracle Whip
3 ripe bananas, mashed
1 tsp vanilla
1 1/2 cup whole wheat flour
1/2 cup sugar
1 tsp baking soda
1/2 tsp kosher salt 🧂
Cinnamon
Brown sugar
Directions:
Preheat your oven to 350°F. Prepare your loaf pan- grease it with butter or margarine, including the sides, or use a non-stick cooking spray.
Beat together the wet ingredients - egg, miracle whip, bananas, and vanilla.
In a separate bowl, combine the dry ingredients together, except the cinnamon and brown sugar.
Combine the wet and dry ingredients. Mix until everything is incorporated.
Pour the batter into your prepared loaf pan. Sprinkle it with cinnamon and brown sugar.
Bake for 1 hour or until a toothpick comes clean after being inserted into the middle of the loaf. A few crumbs are fine!
Let it cool for 10 minutes before taking it out of the pan, and enjoy!
